” CHILI BITE “, FALAFELS BASED WITH YELLOW BREADED PEAS: A CLASSIC OF THE STREET-FOOD IN MAURITIUS ISLAND !
For a hundred small chilli bites
1 kilo of yellow split peas (dholl)
1 large chopped yellow onion (or two onions bunch)
Chopped watercress (optional)
1 bunch of cive (here those coming out of onions “boot”)
4 chopped small red and green bird’s eye (optional)
1 teaspoon of baking soda (optional)
5 tablespoons of cumin seeds (ti lani)
1 teaspoon of aniseed (gros lani)
10g of fresh chopped coriander
25 curry leaves chopped in small pieces LA CALE AUX ÉPICES
Salt and pepper
Oil (Canola or sunflower oil)
1 – Soak the split peas, overnight or at lest 3 hours before the preparation, in cold water to make them soft.
2 – Drain the split peas after soaking and put in a chopper to mix them. Mix them to obtain a thin dough with small pieces. See the picture. It will be necessary to mix the split peas little by little because the 1kg will not fit in your grinder.
3 – Retrieve the first mixed portion and add the onion, chili, baking soda, chives, cumin, salt and pepper.
4 – Mix the rest of the split peas and add gradually add them in the bowl with all the ingredients.
5 – Mix the chili bite pastry dough by hand.
6 – Heat the oil, once it is hot, form balls and fry. The oil must be very hot so that the chili bites do not adsorb too much fat.
7 – Dip them in the oil and fry until the chili bites are golden brown. To know if they are well cooked, you can taste, you will know if it is not cooked as raw split peas is not very good ! Good tasting !
