It’s cold and wet outside? A good curry Thai with coconut milk, that will warm your taste buds! The recipe with PeachyTales.


Ingredients for 4 pers.

• 1 tbsp of coconut oil
• Half of a chopped onion
• 2 tbsp finely grated ginger
• 1 minced garlic clove
• 1 stem of citronella
• 2 tbsp. red curry paste
• 2 cups of light coconut milk
• 2 tbsp. of muscovado sugar
• 1 tbsp. of fish sauce
• 500 g shrimp
• 1 lemon (juice and peel)
• 1/4 cup coriander.


Heat the oil in a large skillet. Add the onion, ginger, garlic, lemongrass and curry paste. Blast for five minutes. Add coconut milk, fish sauce and sugar. Boil, then reduce and simmer for three minutes. Add the shrimp and cover. Simmer for 6-8 minutes. Remove the lemongrass and add the lemon juice. Pour the curry into individual bowls on fluffy white rice and sprinkle with coriander and lemon zest.
